After harvesting saffron flowers, farmers must separate their strings from the flowers. This task is entrusted to people who are called mud cleaners. According to the request of the farmer, the flower cleaners return the saffron to the farmer without roots or with roots. If the farmer wants his saffron without roots, it will almost be the same red saffron sold in stores, which only has the red parts of the saffron strings. If he wants his saffron with the root, the saffron will have both stigma and cream. This saffron is called Dokhtarpich.

In the market, Dokhtarpich saffron is also known by other names such as batch, string or mother saffron.

Dokhtarpich saffron is more wrinkled than other types of saffron and because its white and yellow parts are less pigmented than the red parts; This saffron has less strength of aroma and taste and is usually known as grade 4 saffron. That’s why the price is much lower.

Pushal saffron

Usually, at the time of harvesting saffron, the stigmas are separated from the lower part of the red part, which is called cream. Therefore, apart from the red part, a stigma also has an orange-yellow part. When there is about 1 to 3 mm of cream in one branch, it is called pushal saffron. This category of saffron has more stigma and as a result it will have a higher coloring power (between 170 and 250 units).

The existence of the yellow part in Pushal saffron is a sign of the originality of saffron in the eyes of many consumers and buyers. Because connecting the stigma to the cream is a strong reason for the health and originality of the saffron string, and in this way the buyer will be sure that he is not buying fake saffron. Another reason why buyers show interest in buying Pushal saffron is the existence of a complete string of saffron and as a result having all the properties of saffron.

Due to its lower price than other saffrons, Pushal saffron is usually used more for the production of various products in confectioneries and factories, as well as in home cooking.

Sargol saffron

The pure part of saffron, which is red in color and is located at the end of the saffron string, is called Sargol saffron. The reason for this name is the separation of the highest part of the saffron thread. Sargol saffron has different coloring grades depending on the quality it may have.

Due to the fact that premium saffron is among the different types of saffron, it has good coloring power and a reasonable price, so it is very suitable for home use and also affordable.

Negin saffron

Precious saffron is said to be saffron that, when it is cleaned, the three stigmas of saffron are completely separated from the white part (root) and the orange part, and there is no color except red in it. Also, the larger these stigmas are, the greater the coloring power and the more beautiful its appearance.
